Delicious scones
by mimithorisson
250 g all-purpose flour
3 g cream of tartar
2 g baking soda
2g salt
50 g butter (softened)
25 g white sugar
120 ml milk
20 ml milk (for glazing)
Preheat oven to 425 degrees F (220 degrees C). Prepare a baking sheet with parchment paper.
Sift the flour, cream of tartar, baking soda and salt into a bowl.
Rub in the butter until the mixture is crumbly. Stir in the sugar and milk to mix to a soft dough.
On a slightly floured surface, knead and roll out to ball-sized portions (a bit bigger than golf balls, but if you like your scones bigger than a tennis ball size). Place on the prepared baking sheet. Brush with milk to glaze.
Bake at 425 degrees F (220 degrees C) for 10-15 max (depending on size of balls) minutes then cool on a wire rack. Serve with butter, clotted cream and jam. My kids prefer nutella!

Dear Mimi, I have been looking for cream of tartar but I couldn’t find any.
Where do you find it? I went to the baker’s, the pharmacist’s and to a “magasin bio”. What can I put instead? Levure de boulanger? I can’t wait to try these delicious scones!
Hi Alice! I understand your problem! That is why I ask my friends in London to send me some, or I get it at WHSmith or The real McCoy in Paris, as they sell it. You can just use the levure chimique from Alsa, just add the same amount as you would for the cream of tartar. mimix ps: When I feel extra greedy, I add 20 more g of butter to my scones. They’re a bit richer and I like that:)
I just made these for my family (with the extra butter
– a huge hit! Thanks for the inspiration.
Hi there Mimi!
…first of all you are beautiful with a beautiful family which includes your four legged children …they are absolutely gorgeous…I love all the magnificent pictures that tell the wondrous story you so eloquently add the prose to…the recipes are magic…I can only say this scone recipe is the first time I have seen one that is identical to the one my mom used to make which was her mothers one from Scotland …they are great…sometimes she added raisins to them or dates then all you needed was some butter …or she would add some strong cheddar cheese …thanks for a fabulous look at you great life …makes me want to pack up and move ….god bless
I just found your blog tonight!! What a blessing
Bonjour Mimi, just tried out your scones for our sunday breakfast… My daughter Sophie says: Saulecker! = extra delicious… But I have one question: There is no egg in the dough, right? Have a beautiful sunday! Yours Yushka
Hi Yushka! Happyto hear your daughter like dthe scones. There are no eggs in this recipe! Have a great day, Mimix
I just asked because in all the recipes I use for baking scones at least one egg is to be found. I now tried out several different recipes and the kids loved most the one I prepared today with buttermilk and raisins in it. But yours was very delicious, too (“Saulecker”…;))
